•A new acoustic parameter was investigated to monitor gelation onset.•Particle size of acid-induced milk sample showed significant increase at ∼pH 5.2.•A linear regression was found between gelation point and acoustic parameter.•Acoustic sensor technology has potential for in-line monitoring dairy processes.
