In vitro bioaccessibility and bioavailability of selenium in agronomic biofortified wheat

摘要
•In vitro bioaccessibility and bioavailability of selenium in fortified wheat was evaluated.•Caco-2 cells were used to simulate Se bioavalability in fortified wheat samples.•No difference among the biofortified Se doses were found in the bioacessible fraction.•Only 19.6 % of the bioaccessible Se was bioavailable for absorption by the organism.•The 10 g ha-1 biofortified Se can provide up to 20 % of the recommended daily intake.
