摘要
•Spectra of whole fruit, epicuticular waxes (EW) and fruit w/o EW were acquired by ATR-FTIR.•Infrared spectra revealed several chemical changes on epicuticular waxes and cutin.•These changes were produced by ozone per se and not by mechanical processing.•Colour was not significantly affected by ozone.
