•BW with high GABA content was produced as an anti-hypertensive ingredient.•The mechanism of GABA enrichment in CAP-stressed GBW was investigated.•GABA-enriched BW effectively inhibited ACE activity in vitro.•CAP-stressed germination improved the processing properties of BW as the dough.
