Abstract
This chapter provides updated information regarding designer food and feeds from underutilized vegetables and fruits from non-conventional food sources. These raw materials can supply technological properties and biologically active compounds for use in developing novel food choices responding to the increasing food demand. Most of these products are still produced locally and efforts are required to introduce them to the international food market as an alternative to costly, hard-to-find, or standard ingredients, providing new sensory experiences and delivering health benefits together to craving’s satisfaction or solving a need. Moreover, using these ingredients is a natural response to the impact of globalization, directly influencing daily life, and the need to comply with the sustainable exploitation of natural resources.
