Abstract
Being as one of the largest pickle-producing country in the world, China lags behind the modernization of traditional fermented food and global development and has to make some improvement in the quality of pickles. The current production situation, the fuction in cleaning intestines and resisting cancer, arteriosclerosis and adiposis, and the preservative mechanism of pickles were summarized in this paper. It was proposed that, under the condition of keeping the typical flavor of the pickles, standardized products and scaled production should be realized to create a broader market.
