Abstract
The different concentration chitosans were used as antiseptics to preserve the oil fresh kidney beans, then determined the changes of water content and nutritional ingredient of oil fresh kidney beans during preserving. Probed into oil fresh kidney beans changes law of quality when preserved, in order to lengthen their preserve time. The results were as followed:with the preserving time prolonged, water content, Vitamin C and chlorophyll content of the oil fresh kidney beans continuously dropped, but the Malondialdehyde content continuously added. The optimum preserving conditions were:2% of chitosans, 50% of antiseptics, pH was 5.7, and the temperature was 0 ℃。
