Abstract
In this paper, the source of the main substances contributing to the bitterness in Jiangxiang Baijiu(liquor) such as fusel alcohols, aldehydes, phenolic compounds, sulpho compounds and amino acids etc. were introduced. And the corresponding solutions were put forward.
