The structure design and application of oxidized polysaccharides delivery systems for controlled uptake and release of food functional ingredients

Oxidation of alcohol groups into carboxyl groups provides the neutral polysaccharides with negative charges. The oxidized polysaccharides (OP) can be further prepared into delivery systems via cross-link or self-assembly. The intestinal targeted carriers made of OP can release food functional ingredients specifically at the intestine due to responsive properties upon intestinal pH change or enzymes. This review first discusses the modification of the structure and physicochemical properties of polysaccharides after oxidation. Then the design and preparation for OP-based delivery systems with different structures are described. Furthermore, the behavior of absorption and release of functional ingredients in OP-based carriers is discussed. Finally, the targeted delivery of functional ingredients and their responsive release upon changes in intestinal conditions are highlighted. This review provides comprehensive aspects for the development of targeted and responsive OP-based delivery systems.
