Abstract Kappaphycus alverazii (KA), Eucheuma spinosum (ESp), and Eucheuma striatum (ESt) are widely farmed in Kunak, Sabah, Malaysia, for food and carrageenan sources. This study was done to evaluate the nutritional content, amino acid, and mineral compositions of edible KA, ESp, and ESt seaweeds. The results of the nutritional profile reveal the range of dietary fibre (12.5–8.10% DW), carbohydrate (71.83–70.28% DW), crude protein (3.73–1.56% DW), and lipid content (0.05–0.02% DW) of the three red seaweed species. The chromatographic separation of samples shows that KA, ESp, and ESt contain biologically important amino acids including arginine, threonine, tyrosine, and valine with a total range of 15–20 mg/g DW. Seven compositions of mineral evaluated through inductively coupled plasma optical emission spectrometry are varied according to the species, with ESp showing the highest mineral content of Ca (202.65 mg/100 g DW) and Mg (299.48 mg/100 g DW) and KA exhibiting the highest Fe content of 50.49 mg/100 g DW (p
