•Untargeted GC–MS profiling OPLS models predict liking of strawberry preserves.•Nine highly predictive volatile compounds of acceptability were identified.•A highly predictive compound was identified as a novel linalool oxide compound.•The novel linalool oxide level was reported to be above the odor threshold value.•Recombination testing of predictive compounds report perceptible differences.
