"药食同源"菊花酵素抗氧化活性发酵工艺优化研究

Abstract
以提高抗氧化活性为靶标,通过单因素和正交试验方法对亳菊酵素发酵条件进行了优化.结果表明,培养条件最佳组成为:蔗糖浓度为205 g/L,菊花料液比为1:40(g/mL),pH值为6.5,发酵总天数为12天(即好氧发酵6天,厌氧发酵6天).在最适的发酵条件下,发酵所得酵素抗氧化活性(DPPH抑制活性IC50为0.0342),比未优化前提高了60.08%.该项研究为酵素功能提升提供了理论依据.
