Abstract
银丝草菇(Volvariella bombycina)是一种口感细腻的大型真菌,其耐低温,便于贮藏和运输.按照国家标准测定银丝草菇子实体、菌丝体和发酵液中的营养成分.结果显示,银丝草菇子实体、菌丝体和发酵液均含有粗纤维、蛋白质、多种维生素和人体必需氨基酸,但子实体中各营养成分含量均高于菌丝体和发酵液.说明银丝草菇子实体营养物质丰富,具有较高的推广和开发利用价值,而菌丝体和发酵液可通过深加工技术提高其食用价值和经济价值.
