Abstract

基质辅助激光解吸电离飞行时间质谱(Matrix-assisted laser desorption ionization time of fight mass spectrometry,MALDI-TOF MS)技术,已在化工、医药、食品等领域得到广泛应用.其作为一种快速鉴定微生物的重要工具,高效、准确且结果可重复,且粮油与食品中的微生物种类繁多,数量差别大,分型复杂,故对其快速鉴定的要求高.因此,通过不断开发相关试剂盒、拓宽检测方法通用性及丰富数据库等手段,使得MALDI-TOF MS技术将在粮油与食品微生物快速鉴定领域有着更为广泛的应用空间.
