Abstract
The aim of this study was to employ the NMR relaxation technique to track changes in water mobility during potato starch amylolysis. Taka-Diastase from Aspergillus oryzae, thermostable alpha-amylase from Bacillus licheniformis and alpha-amylase from porcine pancreas have been selected as amylolytic enzymes. Declining of the relaxation time T-2 was observed along with the progress of the enzymatic reaction. The time courses of T-2 were fitted by appropriated mathematical models.
