American highly roasted oak chip was been as experimental materials in this article, vanillin in oak chip was extrated with method of ultrasonic, Effects of extration solvent, ultrasonic temperature and ultrasonic time were investigated by single-fator test and orthogonal design. Optimization extration condition of vanillin was found. Result revealed that the significance sequence of the factors affecting extration rate was alcohol concentration>ultrasonic temperature>ultrasonic time, and their optimum levels are 60% ethanol, 55 degrees C, 5min.
