Abstract
Meat products and water together with fruits and vegetables belong to main sources of nitrates(V) and nitrates(III) in everyday diet. The presence of these contaminations in food is dangerous for health, especially for infants, therefore their daily intake is limited. The level of nitrates(V) was determined in popular cold meats present at the local market and in drinking water - from water mains and wells. It was found that nitrates(V) level in tested cold meats was from 18 to 64 mg/100 g. Nitrates(III) concentration was from 0 to 2.5 mg/100 g. Drinking waters contained from 1.3 to 44 mg/dm(3) of nitrates(V) and traces of nitrates(III). In the case of daily average consumption of meat products and drinking water and the maximum contamination of these products by nitrates(V), it may be estimated that human organism receives 28 and 25% of acceptable daily intake, respectively. Similarly, nitrates(III) intake with those products would be 27 and 1% with cold meats and water, respectively. Analysed products, which are the source of nitrates(V) in diet, pose no health threat as far as average concentration of discussed compound is concerned.
