Water Extractable Arabinoxylan From Rye Bran As Innovative Alternative Carrier Substance For Microcapsulation Of Honey

In this study, we aimed to determine the potential use of Water Extractable Arabinoxylans (WEAX) as an antioxidant, and anti-inflammatory carrier for drug delivery system for the development of natural and ecological diet supplement or wound dressing. Honeydew honey loaded microcapsules were prepared by spray drying using WEAX as a carrier. The analysis of antioxidant activity demonstrated, that compared to the antioxidant activity of WEAX the encapsulation process enhanced the antioxidant activity of microcapsules by 15,7; 9,1, and 78,7% as observed in the DPPH, ABTS+ and FRAP methods. Scanning electron microscopy revealed spherical and homogeneous surfaces of honey loaded WEAX microcapsules. Particle size analysis of WEAX microspheres showed an average size of 5 mu m.
