Abstract
Allergy to galactose-1,3-alpha-galactose (alpha-gal) is a rare IgE-mediated allergy , where symptoms mainly occur hours after ingestion of mammalian innards or meat, e.g. pork, beef, and lamb. Knowledge on absorption rate and size of allergens, i.e. proteins and especially glycoproteins and glycolipids, are sparse, with many variables involved; types and structure of allergens, preparation, texture, cooking, and persons age.
