摘要
With globalization and easy access to information, a consumer market that is more conscious and focused on the search for superior quality coffees appears. To meet this demand, coffee growing is increasingly dependent on the use of more technically advanced processes, including the use of superior genetic materials, the use of irrigation, and the most modern harvest and post-harvest processes. Accordingly, the objective was to work with said assess the response phenotypic d and cultivars of Coffea arabica L., grown in irrigated and dry water, regarding production, sensory quality and size of coffee beans, aiming to analyze the behavior of these materials in relation to the production of special coffees for the environments in question. The cultivars were evaluated in the field, in a split plot scheme and randomized block design, with three replications. Arabica coffee fruits were harvested with 80% cherry grains and processed via wet. Subsequently, characteristics were evaluated related the sensory analysis and physical of grain coffee. The results showed the existence of variability for almost all of the evaluated characteristics, with considerable influence of the genotypic effect. Irrigation increased responses to different cultivars for the variables related s sensory profile and grain size. The responses of cultivars enable reunited them in groups of possible materials to be used when seeking to reconcile high yields and the possibility to produce specialty coffees.
