Pulsed electric field treatment strategies to increase bioaccessibility of phenolic and carotenoid compounds in oil-added carrot purees

摘要
•Phenolic bioaccessibility reached 100 % after pulsed electric fields (PEF).•Total carotenoids, α-carotene and β-carotene bioaccessibility was trebled by PEF.•Applying PEF enhanced carotenoids and phenols release from matrix during digestion.•PEF treatment was more effective than heat to enhance carotenoids bioaccessibility.•PEF did not alter carrot puree quality attributes but decreased its particle size.
