Abstract
本文研究了添加2%、3%、5%、10%的DHA藻油对菜籽油的贮藏性能的影响.试验结果表明,DHA菜籽油的过氧化值和酸价在贮藏过程中与空白菜籽油相比上升较缓慢,TBHQ比维生素E在DHA藻油的应用中抗氧化效果好.添加3%的DHA藻油的菜籽油DHA含量为1.12%~1.18%,随贮藏时间的延长,DHA菜籽油的各种不饱和脂肪酸含量下降,而DHA菜籽油饱和脂肪酸含量基本不变.
