Abstract
水是茶汤品质呈现的介质,对茶性的发挥至关重要.本文综述了不同水质对茶汤品质的影响及影响茶汤品质的主要水质因子——硬度、酸碱度、矿化度、金属离子、非金属离子以及气体等对茶汤品质作用的机理,以期为茶叶品质风味研究以及消费者泡茶择水等提供参考.
