以大豆分离蛋白为原料,研究了大豆多肽的制备工艺及大豆多肽硬糖的生产工艺和配方。正交试验结果表明,大豆分离蛋白水解的最佳条件为:酶解温度55℃,酶量(E/S)=0.2%,酶解时间2h;硬糖的最佳配方为:0-8%大豆多肽,0.8%柠檬酸,0.2%苹果酸。
