小黄鱼和棘头梅童鱼肌肉营养成分分析及品质评价

Abstract
对小黄鱼和棘头梅童鱼肌肉中营养成分及品质进行了分析比较,结果显示:小黄鱼肌肉中水的质量分数为76.41%,显著低于棘头梅童鱼(81.95%);蛋白质量无明显差异;小黄鱼肌肉中粗脂肪和灰分的质量分数分别为1.78%和1.43%,明显低于棘头梅童鱼(2.80%和1.80%);小黄鱼肌肉中胆固醇的质量分数为40 mg/100g,棘头梅童鱼为42 mg/100g,棘头梅童鱼的胆固醇量略高于小黄鱼;小黄鱼和棘头梅童鱼的氨基酸总量分别为1.94%和1.87%;EAAI评分分别为98.53和70.00.可见,小黄鱼比棘头梅童鱼的营养价值略高.2种鱼均含有5种核苷酸,棘头梅童鱼肌肉中IMP的量为1235.89 mg/kg,明显高于小黄鱼(520.85 mg/kg),且核苷酸总量亦高于小黄鱼.小黄鱼和棘头梅童鱼肌肉中含有的饱和脂肪酸、单不饱和脂肪酸和多不饱和脂肪酸的总质量分数分别为44.08%,42.44%,13.48% 和51.29%,26.14%,22.57%;EPA+DHA的质量分数分别为11.44% 和22.57%.小黄鱼和棘头梅童鱼肌肉中含有19种矿物质元素,矿物质元素丰富,营养价值高.
