加工方式对葛仙米营养成分的影响

Abstract
以葛仙米为原料,重点研究电磁炉、微波炉、高压锅三种处理方式对葛仙米营养成分的影响.结果表明经过三种不同方式处理后,常规成分水分、灰分、脂肪、酸度、总蛋白、总糖和还原糖含量均减少,微波、电磁炉和高压锅三种加工方式处理的葛仙米中必需氨基酸保留率高,分别达到90.91%、91.22%和97.31%,但是加工方式会改变葛仙米单糖组成,经过处理后原样中的甘露糖、葡萄糖醛酸、葡萄糖消失,产生了半乳糖醛酸.
