黄刺玫果功能性饮料的制备工艺研究

Abstract
研制一种果香浓郁、酸甜爽口、营养丰富,具有良好保健作用的黄刺玫果功能性饮料.以山西野生资源黄刺玫果为原料,通过单因素试验和正交试验对配制工艺进行优化,以感官评价为指标,得到最佳工艺配方,并建立质量标准.结果表明,料液比1:8:,白砂糖8%,柠檬酸0.2%为最佳工艺配方.20℃避光保存,在12个月内稳定性良好.由上述工艺条件下制备出的黄刺玫果功能性饮料色泽艳丽,口感酸甜爽口,营养丰富,品质较好.
