黄曲霉毒素(AFT)是由黄曲霉和寄生曲霉在温度、湿度合适的条件下产生的真菌毒素,其存在对人体具有极强的致癌、致畸等危害,包括AFB1、AFB2、AFG 1、AFG 2等[1,2].全世界每年约有1/4的食品会受到黄曲霉毒素的污染,花生、玉米等原料在生产、运输中易受黄曲霉毒素的污染[3].
