Abstract
本文建立含糖肉制品淀粉含量的测定方法,对国家标准方法进行了改进.含糖肉制品在用热的85%乙醇洗糖后,用1%α-萘酚测试不含可溶性糖后,用盐酸水解.本研究方法RSD为2.82%.与其他方法相比,该方法操作简单、方法准确、经济快速,可适用于含糖肉制品淀粉含量的检测.
