榨辣子是贵州省黔东南州苗族的特色食物,外观呈淡红色或红色粉状黏物,材料易取,制作工艺流程简单,保存方便,食用便捷,口味独特.本文以榨辣子制作工艺为出发点,对榨辣子的制作流程进行探索,为榨辣子的推广及食用普及提供理论依据,同时为后期的榨辣子的营养成分分析提供理论基础.
