Abstract
研究了香菜根提取液在秋葵饮料中的应用,结果表明,香菜根提取液以添加量1％加入秋葵饮料最佳,秋葵饮料中抗坏血酸≥1.4 mg/100 mL(以AA计),可溶性固形物≥7.5％(以20℃折光法计).检测结果表明,秋葵饮料中菌落总数的数值≤100 CFU/mL,大肠菌群的数值≤3 MPN/100 mL,金黄色葡萄球、菌沙门菌及志贺菌不允许检出.
