在速溶茶加工过程的浸提工序阶段,添加木瓜蛋白酶可极显著提高速溶绿茶(梅占)中酯型儿茶素和EGCG的含量,但是添加量不同,对速溶乌龙茶(八仙)中酯型儿茶素和EGCG的含量影响不同。
