Abstract
丘北辣椒始种于明朝后期,至今已经有350多年的历史了.丘北小椒个小、色艳、皮厚,辣而香,味道纯正,油脂高,食味佳,富含蛋白质.经测定,丘北辣椒果肉含有脂肪13.1%、蛋白质11.98%,有机酸辣椒素均有一定的含量.另外,每100 g干椒含Vc 24.366 mg,总抗坏血酸2.6 mg,胡萝卜素3.21 mg,此外,还含钙、磷、镁等微量元素.日常生活中,人们通常喜欢用丘北辣椒作佐料,制作别有风味的蘸水、卤腐、咸菜等.
