羽毛中富含角蛋白,是具有巨大潜在价值的动物性蛋白资源.文章主要介绍羽毛粉的营养价值、羽毛粉的加工方法(高温高压水解法、膨化法、氧化还原法、酸碱处理法、酶解法及微生物发酵法)及相应研究进展.同时,简要介绍各种复合方法的应用,并对羽毛粉的应用前景进行展望.
