Abstract
胡萝卜、枸杞和菊花原材料中含有丰富的β-胡萝卜素、叶黄素和玉米黄质等,这些是人眼视网膜和视色素的重要营养素.研究以胡萝卜、枸杞、菊花为原料调配的一款浊汁型护眼功效饮料.通过正交试验确定该饮料的最佳配方为胡萝卜汁26.2%,枸杞汁39.4%,菊花汁26.2%,白砂糖8%,柠檬酸0.1%,黄原胶0.1%.对该饮料多种理化指标进行了测定,其可溶性固形物含量为7.26%,总类胡萝卜素含量为0.153 mg/g,叶黄素的含量为6.90μg/mL.该饮料常温放置21 d,每7 d做一次感官评定、菌落总数和大肠菌群测定,结果表明:14 d内饮料的稳定性和风味良好;菌落总数15 cfu/mL,未超标,大肠菌群未检出;21 d菌落总数超标,但大肠菌群未检出.
