Abstract
以七种植物蛋白代替牛肉膏和蛋白胨作为氮源进行透明质酸发酵,研究了直接添加、酸解、碱解以及酶解这几种植物氮源的不同处理方式对透明质酸发酵的影响,结果表明:使用碱性蛋白酶水解的棉籽蛋白作为氮源时的效果最好,在摇瓶和30 L发酵罐中的透明质酸发酵产量分别达到了1.47 g·L-1和5.94 g·L-1.
