Abstract
肉类掺假行为不仅侵害了消费者的利益,甚至危害到消费者的身体健康.因此,对肉类制品成分的检测及其质量的控制监管十分必要.针对这种现象,主要综述以ELISA、PCR、电子鼻技术为主的快速检测方法,并表述了这些技术在近几年的发展进程和存在的一些不足.
