Abstract
通过一种新的分光光度法,测量葡萄酒中苹果酸的含量,并与高效液相色谱法对比.结果表明,该分光光度法的相对回收率为101％,稳定性高,重复性好,准确性基本接近高效液相色谱法,能较为准确地检测出葡萄酒发酵过程中的苹果酸含量,可以作为高效液相色谱法的一种替代方法.
