Abstract
针对生鲜产品在途质量控制难题,应用HACCP体系从事前、事中和事后三个阶段进行全过程控制,确定关键控制点并制定危害分析表单和实施计划表,以保障生鲜产品配遂运输中的质量,同时将QFD运用到HACCP体系的预防措施和纠偏措施制定中,实现定性和定量相结合,解决主观性影响较强的问题.
