Abstract
分别采用胰蛋白酶、胰蛋白酶结合风味酶酶解猪肉蛋白.两酶解液超滤得到分子质量范围为1~3 ku和小于1 ku的4个呈鲜味组分,再利用Sephadex G-15凝胶色谱分离,通过高效凝胶液相色谱、基质辅助激光解析电离飞行时间质谱分析,确定从胰蛋白酶酶解液中分离得到的2个鲜味肽组分为:分子质量范围161~533 u,以质荷比357.2411的肽为主;分子质量范围896~1 961 u,以质荷比1 198.7084和1 790.8937的肽为主;从胰蛋白酶/风味酶酶解液中分离得到的2个鲜味肽组分为:分子质量范围432~875 u,以质荷比496.3289的肽为主;分子质量范围534~1 209 u,以质荷比585.3514和684.4219的肽为主.其中质荷比为1 198.7084和1 790.8937的多肽通过谱库检索,可能的氨基酸序列分别为Asp-Ala-Glu-Asp-Ile-Val-Asn-Thr-Pro-Lys-Pro,和Ser-Tyr-Glu-Leu-Pro-Asp-Gly-Gln-Val-Ile-Thr-Ile-Gly-Asn-Glu-Arg.
