酱香型白酒中吡嗪类化合物的检测及特点

Abstract
建立了白酒中8种吡嗪化合物的液相色谱串联质谱检测方法.通过检测结果找出酱香型白酒中吡嗪化合物的特点(8种吡嗪化合物中三甲基吡嗪和四甲基吡嗪含量较高),同时对真假茅台酒酒样中8种吡嗪化合物进行测定,并将检测结果进行分析,其中真茅台酒四甲基吡嗪的含量远远高于其他吡嗪化合物,含量在9.25～28.3 mg/L,假茅台酒中四甲基吡嗪的含量在0.89～12.5 mg/L.该方法对提高酱香型白酒质量及真伪酒的鉴别提供参考.
