Abstract
以沙棘汁和燕麦为原料,采用发酵法生产燕麦沙棘酒.先确定燕麦粉糖化液的最佳制取工艺条件,再通过正交试验确定燕麦沙棘酒发酵的最佳工艺条件.在燕麦粉糖化液用量17%,沙棘汁用量为27%,酵母接种量1.0‰,发酵温度28℃,发酵pH值3.8条件下酿造的燕麦沙棘酒,酒精度12.3%vol,风味纯正,酒体丰满,营养丰富,感官评分为86分.
