还原型谷胱甘肽纳米脂质体的修饰及稳定性评价

Abstract
本文通过薄膜-超声法制备了还原型谷胱甘肽的纳米脂质体(Lip),并用壳聚糖和海藻酸钠对Lip进行了双层修饰,然后测定了修饰前后Lip的贮藏稳定性和在胃肠道环境的消化特性,利用不同数学模型分析了谷胱甘肽在胃肠道的释放动力学.结果 表明,海藻酸钠-壳聚糖双层修饰的Lip(AL-CH-Lip)形状为球形,平均粒径为(94.44±1.71) nm,电位为(-42.57±0.91)mV,包埋率为93.5%±0.16%.与未经修饰或单独壳聚糖修饰的Lip相比,AL-CH-Lip具有更高的贮藏稳定性和消化稳定性,更适合作为功能性添加剂应用于食品工业和医药等领域.
