Abstract
为研究β-葡萄糖苷酶水解对水蒸气蒸馏法提取的灵香草挥发油的挥发性成分的影响,采用气相色谱-质谱(gas chromatography-mass spectrometry,GC-MS)技术对酶水解灵香草油及其对照组进行检测和对比分析.结果表明:(1)经酶解提取的灵香草油中共分离鉴定出63种挥发性香气成分,总相对百分含量为78.33%,包括芳香族类13种、醇类8种、酸类8种、酮类6种、酯类5种、烷类5种、烯类5种、醛类4种、酚类1种和其他杂环化合物8种;对照组分离鉴定出43种挥发性物质;(2)和对照组相比,酶解灵香草油新出现39种挥发性成分,19种物质消失,21种物质的相对百分含量发生变化;(3)经酶辅助提取的灵香草油的整体挥发性成分改变显著.
