黄酒发酵菌株筛选、鉴定及应用

Abstract
通过初筛从酒曲中筛选得到6株产蛋白酶的菌株.通过对6株菌株进行酶活检测,得到高蛋白酶活力菌株CX1.同时对CX1进行菌株鉴定,通过BLAST进行比对分析确定其为黄曲霉.利用黄曲霉毒素在360 nm紫外灯下有荧光反应进行毒理试验,菌落无荧光斑点,检测无毒.蛋白酶活曲线中CX1的蛋白酶活力最高可达到196 U/mL,进行黄酒发酵实验测得氨基态氮1.51 g/L、糖度96.95 g/L,氨基态氮大于优质黄酒的标准值.
