低度保健型黄酒发酵及调配工艺研究

Abstract
本文以大米、金银花为主要原料,发酵生产黄酒原浆,并调配低度保健型金银花黄酒.以感官评分为测定指标,在单因素的基础上进行正交试验确定其最优发酵及调配工艺.研究结果表明:当黄酒的配方为酒药(甜酒曲)0.3%、麦曲6%,后发酵时间3d、料液比1∶1时,制得的黄酒醇香、柔和,具有黄酒独特的风格.当黄酒的添加量为60%、金银花汁添加量为20%、蔗糖为10%、柠檬酸为0.4%,制得的金银花黄酒不仅有浓郁的米香还有金银花的风味.
