Abstract
利用随机试验对蒸汽杀青热风脱水温度(145℃、160℃、175℃、190℃)和时间(3.6min、2.4min、1.8min、1.4min)进行优化.结合品质分析和生产效率,名优绿茶蒸汽杀青脱水的温度控制在175℃以内,时间控制在2.4min以内为宜,最优组合为温度175℃,时间1.4min,其次是温度145℃,时间2.4min.依最优工艺组合制得的茶叶干茶色泽翠绿,香气清高,汤色绿明,滋味鲜醇,叶底绿明.
