Abstract
以生姜为原料,亚硝酸盐清除率和亚硝胺合成阻断率为评价指标,优化生姜中清除亚硝酸盐和阻断亚硝胺合成的有效成分提取工艺,研究结果表明:超声辅助提取效果最好,最佳工艺参数料液比1∶5 (g/mL)、超声功率171W及超声时间为30 min,此条件下得到生姜提取物亚硝酸盐清除率和亚硝胺抑制率分别为45.81%和24.56%.
