利用单因素试验和响应面法对曲麻菜蛋白的提取工艺进行研究,并确定其较优工艺条件为:NaOH浓度0.24 mol/L,液料比26∶1mL/g,超声波功率380 W,超声波时间16 min.在该条件下,曲麻菜蛋白提取量可达2.34mg/g.
