聚甘油脂肪酸酯是一种来源天然、生物降解性好、安全性高的新型乳化剂.近年来,随着“绿色化学”概念的兴起,此类乳化剂的研究引起关注,并取得了一定的进展.主要介绍聚甘油脂肪酸酯的合成方法、性能,以及其在油脂加工、乳制品、饮料、培烤食品、巧克力和糖果等食品工业中的应用,并探讨了我国聚甘油酯的开发前景.
